Pumpkin Chocolate Chip Cookies

Everyone loves Pumpkin this time of year! These cookies are a spectacular combination of pumpkin and chocolate in a soft and yummy cookie. Danika Beaton and Olivia O’Connor said, “The cookies were so soft and tasted delicious!” These chocolate chip pumpkin cookies are sure to be on the top of your list this fall!
Ingredients
1 canned pumpkin
1 cup of sugar
½ cup of vegetable oil
1 egg
2 cups of flour
2 teaspoons of baking powder
2 teaspoons of ground cinnamon
½ teaspoon of salt
1 teaspoon of milk
1 tablespoon of vanilla extract
2 cups of semi-sweet chocolate chips
Instructions
1. Pre-heat the oven to 350 degrees F.
2. Combine 1 can of pumpkin, 1 cup of sugar, ½ a cup of vegetable oil, 1 tablespoon of vanilla and 1 egg together in a separate bowl.
3. In another bowl, stir together 2 cups of flour, 2 teaspoons of baking powder, 2 teaspoons of ground cinnamon, and ½ a teaspoon of salt.
4. Then add 1 teaspoon of milk to the bowl with the flour mixture.
5. Next, add the flour mixture to the wet ingredients and mix thoroughly.
6. Then add in semi-sweet chocolate chips.
7. Then scoop out about a spoon full of cookie dough onto a greased cookie sheet.
8. Put the cookies in the oven for about 10 minutes or until lightly browned or firm.

Apple Pie

This apple pie is a fan favorite for fall! Apple pie is one of my favorite fall desserts of all time and it’s perfect to make for friends and family. Avery Pipoly says, “I really like this apple pie because the flavors of the cinnamon spices and soft apple just melt in your mouth.” This homemade recipe will taste amazing and be way better than store bought pies.
Ingredients
Crust
1 cup of shortening
2 cups of flour
½ cup of cold water
1 teaspoon of salt
1 tablespoon of sugar
Filling
About 3lbs (7-9 apples) of McIntosh apples or any soft apple
¾ cups of sugar
2 tablespoons flour
¼ teaspoon of cloves
½ teaspoon of nutmeg
1 tablespoon cinnamon
Instructions
1. first get a bowl and add a cup of shortening and slowly add ½ a cup of flour and mix it together (Using a fork to mix will work the best).
2. Then add 1 teaspoon of salt and one tablespoon of sugar.
3. Then alternate adding a little bit of the ½ cup of water and the rest of the flour while mixing in between.
4. Once your dough is mixed roll it into a sort of rectangle loaf, then cut the dough into a 1/3 piece and a 2/3 piece. (The 1/3 piece is the top of the pie, and the 2/3 piece is the bottom).
5. To make the filling, peel and core 3lbs of apple (7-9 apples) then cut the rings into fourths.
6. Then add ¾ sugar, 2 tablespoons of flour, ¼ teaspoon of cloves, ½ teaspoon of nutmeg and 1 tablespoon cinnamon to a bowl with the cut apples and mix thoroughly.
7. Then roll out the 2/3-piece crust to fit the pie pan and carefully place the bottom crust in the pan making sure there is a bit of crust hanging on the side.
8. Then add your apple pie filling.
9. Roll out the last piece of dough to make a lid for the apple pie and along the edges pinch the top and bottom together to seal the pie. Also make little pokes on the top to let out any steam while cooking.
10. Put the pie in the oven for 15 minutes at 425 degrees F then change the temperature to 350 and cook the pie for another 30 minutes or until the apples are soft.
Chocolate chip Mug Muffin

One of the best things about fall is having a hot muffin for breakfast on a crisp morning. This is a super easy recipe where you can make your own personal muffin in minutes. The recipe is very flexible and features just a vanilla base muffin so you can add lots of different toppings and mix-ins.
Ingredients
1 tablespoon of melted butter or canola oil
2 tablespoons of white sugar
3 tablespoons of milk
1 teaspoon of vanilla extract
¼ teaspoon of baking soda
4 tablespoons of flour
And chocolate chips at your own judgement
Instructions
1. Find a microwavable mug or a ramekin
2. Add 1 tablespoon of canola oil or melted butter and 3 tablespoons of milk
3. Then add 2 tablespoons of white sugar and mix it in
4. Then add 1 teaspoon of vanilla and ¼ teaspoon of baking soda
5. Then add 4 tablespoons of flour and mix together until the muffin batter is formed
6. Then add chocolate chips into the batter and on top. (You could also add blueberries, sprinkles, etc.)
7. Then microwave for around 60 seconds. (All microwaves will be different so use your best judgment.
8. Lastly let it cool off and enjoy! You can add whatever you want on top! Whip cream, fresh fruit, you name it!
